Baked apple cinnamon oatmeal muffins

Do you find that your mornings are too rushed to eat a healthy breakfast? If you love apples and oatmeal as much as I do, you really need to try my Baked Apple Cinnamon Oatmeal Muffins. These healthy muffins are dairy free, refined sugar free, and take less than 10 minutes to mix up.  
Bake Apple Cinnamon Oatmeal Muffins

Ingredients
  • 1 1/2 cups unsweetened almond milk, or any other dairy free milk
  • 2 large eggs
  • 1/2 cup maple syrup or honey
  • 4 teaspoons melted coconut oil
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon sea salt
  • 1/2 cup unsweetened applesauce
  • 1 medium apple peeled, cored, and diced (about 1 cup). I have used Gala and Fuji, but I'm sure any apple would work well.
  • 3 1/2 cups old-fashioned oats
  • thin apple slices for garnish, optional

Instructions
  1. Preheat oven to 350 degrees. Grease a 12-cup muffin pan with non-stick cooking spray. Set aside.
  2. In a large bowl, lightly beat the eggs. Whisk in milk, maple syrup, coconut oil, vanilla, and applesauce.
  3. Add cinnamon, salt, and baking powder. Mix until blended. 
  4. Add oats. 
  5. Fold in apples.
  6. Divide batter into muffins pans. They will be quite full. Top with sliced apples, if desired. 
  7. Bake for 18-25 minutes, or until set.
  8. Eat fresh out of the oven for the real, hot oatmeal effect, or store them in the fridge, for up to 5 days. Pop 'em in the microwave to bring them back to life.
